Hi, I want more veggies. I'm thinking about 1/2 cup of shredded carrots. Anything else?

I see in the review section someone added fresh peas, but no amount.

I don't think anyone will complain if you add a little shredded carrot to your rice dish. As a rule Portuguese rice doesn't have much in the way of veggies, aside from onion and tomato, but it's a recipe that varies from grandma to grandma- mother to mother, and points in between. You could add in fresh or frozen peas, sliced sugar snaps, or whatever else made you happy.

Agee with Lori about the flexibility of the dish, able to hold vegetable additions.

On volume, I would start small and add more if wanted.

The only thing I’d be concerned about is a large volume of vegetables diluting the impact of the seasoning.

So taste when all (original and additions) are cooked through and add more seasoning if needed. Warm a few minutes more, then serve.
