Chazank Roo (Traditional Flatbread from Lorestan, Iran)

A beloved rustic flatbread from the Lorestan province in western Iran, Chazank Roo is simple, hearty, and traditionally served with melted clarified butter and walnuts. It's a humble yet soulful taste of rural Iranian kitchens.

Ingredients:

2 cups all-purpose wheat flour

About 1 cup warm water (adjust as needed)

1/2 tsp salt

2–3 tbsp clarified butter (ghee) or local butter

Crushed walnuts (optional, for topping)


Instructions:

1. In a bowl, mix the flour and salt. Gradually add warm water and knead until you get a soft, smooth dough that doesn’t stick to your hands.


2. Knead the dough for a few more minutes, cover, and let it rest for about 15 minutes.


3. Lightly flour a surface, roll out the dough into a flat, round shape—about the size of a skillet.


4. Heat a dry pan (cast iron preferred) over medium heat. Place the flatbread on the pan and cook for 2–3 minutes on each side, or until golden spots appear.


5. While still hot, brush with clarified butter or local butter, and optionally sprinkle with crushed walnuts. Roll it up and enjoy warm!



Serving Tip:

Serve with hot tea for a traditional Iranian breakfast or snack.
