Long time bread baker here. I find using 1:1 whole wheat I. A recipe written for a-p or basic white flour leads to heavier abd dryer bread. Two alternatives that work: • if you want to use all whole wheat, use 7/8 the amount of whutvflour in the original. • use same amount of flour from the original, but split it half white and half whole wheat.
