This herbal and smokey riff on a margarita is a perfect springtime sipper, but your largest hurdle to making this might be finding Green Chartreuse. In the last few years, the Carthusian monks that make the liqueur have slowed production. Although their recipe is closely guarded, there are a number of close substitutes now readily available. My preferred is Faccia Bruto Centerbe but keep an eye out for Dolin Génépy le Chamois Liqueur as well. —Noah Tanen
Ingredients

mezcal

1 ounce
lime juice

1/2 ounce
simple syrup

1/2 ounce
Green Chartreuse or substitute

salt for rimming

lime wedge for garnish
Directions

Add the mezcal, lime juice, simple syrup, and green chartreuse to a cocktail shaker with ice. Shake for 30 seconds and strain into a chilled and salt-rimmed rocks glass filled with more ice. Garnish with a lime wedge and serve.
